In the golden era of menu design, many foods were made to look human. They were given faces by talented illustrators and dressed up – this egg has a hat and a cane. Chicago's famed Bismarck hotel was opened in 1894 by German immigrants Emil and Karl Eitel and for many decades, businessmen and lawyers conducted their affairs over breakfasts of steak, eggs and coffee in the hotel's elegant Walnut Room. The Eitel family sold the Bismarck in 1956 and it went through several other owners before eventually closing in 1996. Proprietor Jim Ireland expanded the property over two decades, adding a Lobster Grotto, a Marine Room and a banqueting hall modeled after the saloon of a passenger ship. The infamous gangster John Dillinger often dined at J. H. Ireland - he liked the frog legs - and famed attorney Clarence Darrow ate a victory dinner at the restaurant at the end of the famous Leopold and Loeb murder trial. Established in New York in 1931 by Adolph Levitt, an immigrant from Russia, he shortened the name to donut and developed the first automatic doughnut making machine. Eventually there was a chain of 18 Mayflower Donuts shops across the country. Levitt printed the famous jingle on Mayflower donuts boxes, showing two men dressed as old-fashioned jesters, facing away from each other, one smiling at a fat doughnut with a small hole and the other frowning at a thin doughnut with a large hole: \"\u003ci\u003eAs you ramble on thru Life, Brother, Whatever be your Goal, Keep your Eye upon the Doughnut And not upon the Hole\u003c\/i\u003e.\"   Sally Levitt Steinberg, granddaughter of the founder, recalls: \"My grandfather found this motto, the Optimist's Creed, as it is called, inside a cheap picture frame he happened to buy in a dime store. He adopted it as his philosophy of life.\" The phrase became so popular that Franklin D Roosevelt and Herbert Hoover, campaigning in 1932 during The Depression, worked the phrase into their campaign speeches and also ate at Mayflower Donuts. For decades, Mayflower donuts were so popular there were constant lines outside the shops with people waiting eagerly for plump, brown and sugary doughnuts to emerge hot from the machines. Sadly, the chain closed in the 1970s. His restaurants, designed by the revered architect Wayne McAllister, were fabulously kitsch and garish and customers could spot their huge neon signs from miles away. McDonnell employed a local artist to sketch whimsical interpretations of the car-hops or waiters that served cokes, hamburgers and fries to customers for its menus and this is one of the earlier examples. The restaurant also served some of the best fried chicken in the state, raising its own chickens on a 200 acre ranch at Daggett, California. It was all thanks to American engineer and industrialist George Pullman who, after spending an uncomfortable night sleeping upright during a train journey, was convinced passengers would pay for better amenities. He established his company in Chicago in 1867. Passengers could rest in sleeping cars and eat in dining cars decorated with chandeliers and leather banquettes as trains sped from city to city. It must have been a delightful way to travel. Freshly prepared gourmet meals were served by uniformed waiters and champagne, liquor and beer were served - though Prohibition laws in many states restricted when these beverages could be served. Other celebrated musicians who played at the Blackhawk included Benny Goodman and Glenn Miller as well as a young crooner called Perry Como. Also note the compass with knife, fork and spoon on the left hand side. The Neil House was Columbus's hotel of choice for the rich and powerful throughout much of the 19th and 20th centuries. It started out as a tavern in the 1820s growing into a luxury 600 room hotel which played host to at least fifteen Presidents including Andrew Jackson, Abraham Lincoln, William McKinley, William Howard Taft, Warren G. Harding and Theodore Roosevelt. Other notable guests over the years included Charles Dickens, Oscar Wilde, Amelia Earhart and Eleanor Roosevelt. Located on the second and third floors of 7-9 Mott Street, it became a magnet for \"slummers\" – American tourists looking to do something exotic in the evenings. They sat at mahogany tables inlaid with mother of pearl, ate chop suey, listened to music played on a baby grand piano and congratulated themselves on their spirit of adventure. When Port Arthur became the first Chinese restaurant in the city to obtain a liquor license, it became an even more risqué and fashionable place to be, though in truth, there was never any danger attached to going there. Local Chinese made the restaurant their prime destination for weddings and family ceremonial dinners, taking over the banquet hall upstairs. Darden welcomed people without regard to race (not always a popular choice in the south at the time), offered his food at moderate prices, and paid acute attention to service. His restaurant became very successful.\u003c\/p\u003e\n\u003cp\u003eUtilizing the financial rewards of The Green Frog, Darden invested in several Howard Johnsons and hotels in Florida. The advent of air conditioning, the blossoming network of interstate highways, and a growing population, provided the path to opportunity for this entrepreneur. Residents and tourists needed places to eat. In 1968, Bill Darden thinking that a seafood restaurant might be successful in a non-coastal location, opened the first Red Lobster in Lakeland, Florida.\u003c\/p\u003e\n\u003cp\u003eThe rest is definitely history. Darden, as the corporate entity is now known, grew to become one of the world's largest full- service restaurant company owning and operating more than 2,000 restaurants. (note the modern use of lower case) was situated at 72 E. Randolph Street in downtown Chicago and billed itself as \"Chicago's Most Unique Fish \u0026amp; Sea Food Restaurant\". Its motto was FOR HEALTH'S SAKE - EAT FISH.\u003cbr\u003eThis menu is certainly for adventurous eaters. It consists mostly of seafood but also includes alligator and rattlesnake. Both are reptiles.\u003cbr\u003eFor religious reasons, some people abstained from eating the flesh of mammals and birds on Fridays but eating alligator and rattlesnake would have been acceptable. Some historians believe it was invented by a bartender who worked in a bar on Broadway, near Houston Street. If you look carefully at the image you can see that the vast majority of the people are in uniforms. A sure sign that this was done in 1945 after WW2 had ended and service men and women were returning home.\u003c\/p\u003e\n\u003cp\u003eIt was refurbished in the 1960s and sold in the 1970s to the Trump Organisation, which gutted the building and remodelled the exterior in reflective glass. It is the oldest named train in the United States, operating since November 1894 along the sunset route (though originally named the Sunset Express). The Sunset Route (originating in New Orleans) is the southernmost of the three gateways to the West Coast, envisioned through the Transcontinental Railroad Act. The other two embarked from Chicago, IL, and St. Louis, MO. The advantages of the Sunset Route were that unlike the other two, it did not have to assault the front range of the Rockies, and was an all-weather, year-round route that didn’t face the crippling snows of the Wasatch or Sierra mountain ranges to reach the Pacific coast. In 1930, the route was cut back to Los Angeles and the train carried coaches for the first time. In 1936, the train resumed running to San Francisco and was one of SP's first trains to receive air conditioning. In January of 1942, it was cut back to Los Angeles; the Sunset Limited was never again all-Pullman and never again ran beyond Los Angeles.
